Vegan Lemon Curd Recipe

Prepare the tofu: Drain the silken tofu well and place in a bowl.
Mix: Put the tofu, plant-based yoghurt, agave syrup, lemon juice, lemon zest, vanilla extract and a pinch of salt in a blender. Mix everything well until a creamy consistency is obtained.
Season to taste: Season the curd to taste and add more sweetener or lemon juice to taste.
Refrigerate: Put the lemon curd in a bowl and let it cool in the fridge for at least 1-2 hours so that it hardens.
