Ingredients
For the gnocchi
- 250 g durum wheat semolina
- 250 ml water
- 1 tablespoon extra virgin olive oil
- Salt to taste
- 1 egg (optional, for a richer texture)
For the broth
- 1 litre vegetable stock (or meat stock, to taste)
- Salt and pepper to taste
- Chopped fresh parsley (for garnish)
