Ingredients for 4 to 6 people:
1 kg firm-fleshed potatoes (Charlotte, Nicola, etc.), sliced into 3-5 mm rounds;
200-250 g cooked or smoked ham, cut into pieces or strips;
1 finely chopped onion (optional);
1 minced garlic clove (optional);
40 g unsalted butter;
40 g all-purpose flour;
500 ml whole milk
; 100 g double cream or single cream
; fine salt, freshly ground pepper, grated nutmeg;
100-150 g grated cheese (Gruyère, Comté, Emmental, or Cheddar).
Preparation steps
: 1. Prepare the potatoes:
Peel, wash, and slice the potatoes. Cook them for 10-12 minutes in a large pot of boiling salted water until just tender. Drain gently.
2. Prepare the Filling:
Cut the ham. If using, sauté the onion and garlic in a little butter or oil until softened. Add thyme if desired.
3. Make the Sauce
Melt the butter, add the flour and mix to make a roux. Gradually whisk in the milk. Let it thicken, add the cream, then season with salt, pepper and nutmeg.
