Broccoli soup: the stomach’s best friend

  • 1 head broccoli, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Optional: some cream or grated cheese for extra creaminess
 

 

Instructions:

  1. In a large saucepan, sauté the diced onion and chopped garlic until fragrant.
  2. Add the chopped broccoli to the pot and cook for a few minutes until slightly soft.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Cook the soup for about 15 to 20 minutes or until the broccoli is tender.
  5. Using a hand blender or a normal blender, puree the soup until smooth.
  6. Season with salt and pepper to taste and add a little cream or grated cheese to taste.
  7. Serve hot and enjoy the comforting goodness of the broccoli soup!
