Ingredients

For the Eggs

  • ¼ cup mayonnaise

  • Salt &  pepper, to taste

For the Shrimp Topping

  • 12 small shrimp (peeled & deveined)
  • 1 tsp Cajun seasoning
  • ½ tsp garlic powder
  • 1 tbsp olive oil or butter
  • Fresh parsley, chopped (for garnish)

Ingredient Notes

  • Shrimp: Small or medium shrimp work best — tender and easy to top each egg.
  • Cajun seasoning: Adds smoky, spicy flavor. You can make your own blend or use store-bought.
  • Mayonnaise & mustard: Balance the spice and create a creamy, smooth yolk filling.
  • Lemon juice: Adds brightness and cuts through the richness.

Instructions

Step 1: Boil the Eggs

  1. Place eggs in a saucepan and cover with cold water.
  2. Bring to a boil, then remove from heat. Cover and let sit for 10 minutes.
  3. Transfer eggs to an ice bath for 5 minutes, then peel carefully.

Step 2: Prepare the Filling

  1. Slice eggs in half lengthwise and remove the yolks.
  2. In a bowl, mash yolks with mayonnaisemustardlemon juice, and Cajun seasoning.
  3. Mix until smooth; season with salt and pepper to taste.

Step 3: Cook the Shrimp

  1. In a skillet, heat olive oil over medium heat.
  2. Add shrimpCajun seasoning, and garlic powder.
  3. Sauté 2–3 minutes per side, until pink and cooked through. Remove from heat.

Step 4: Assemble

  1. Spoon or pipe the yolk filling into the egg whites.
  2. Top each with a cooked shrimp.
  3. Garnish with chopped parsley and a sprinkle of Cajun seasoning for color.
