INSTRUCTIONS:
STEP 1: PREPARE THE POTATOES
Cook the potatoes: Peel the potatoes and cut them into pieces. Cook them in a pot of boiling salted water for about 15-20 minutes, until tender. Drain and let cool slightly.
Mash the potatoes: In a large bowl, mash the potatoes using a potato masher or fork until smooth.
STEP 2: MAKE THE KIBBLE
BATTER
Add the ingredients: Stir the egg, grated cheese, flour, salt, pepper and paprika (if using) into the mashed potatoes. Mix well until all the ingredients are well combined.
STEP 3: FORM THE KIBBLE
Form the kibble: With your hands, take a small amount of dough and form balls or patties according to your preference. Repeat until the dough is used up.
STEP 4: FRY
Heat the oil: In a large skillet, heat the oil over medium heat. Make sure there is enough oil to submerge the kibble.
Fry the kibble: Fry the kibble in small batches for about 3-4 minutes on each side, until golden brown and crispy. Remove them and drain them on paper towels.
STEP 5: SERVE
Garnish and serve: Arrange the croquettes on a serving platter and sprinkle with chopped fresh parsley. Serve hot with a sauce of your choice.
