Dumpling soup with leafy vegetables and spring onions

 

Prepare the ravioli :**– In a bowl, mix the minced pork or chicken, chopped napa cabbage, green onions, soy sauce, sesame oil, ginger and garlic well.– Place a small spoonful of the filling in the center of each wonton sheet.– Moisten the edges of the package with water, fold it into a triangle and press it down, to seal the edges. Make sure there are no air pockets.– Bend the two corners of the triangle towards each other and press them to seal.2. **Cook the dumplings :**– Bring a large pot of water to a boil. Add the dumplings in batches and cook for about 4 to 5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.3. **Make the soup :**– In a large saucepan, bring the chicken or vegetable broth to a boil.– Add soy sauce, sesame oil, and chili flakes (if using).– Add baby spinach or pak choi and cook until wilted.– Add the cooked meatballs to the soup and simmer for another 2-3 minutes.4. **Serve :**– Pour the soup into bowls, making sure each serving contains several meatballs.– Garnish with chopped green onions.– Season with salt and pepper to taste.
