2. Prepare the Creamy Filling
- In a large bowl, add the double cream, cream cheese and Biscoff spread.
- Whisk with an electric mixer until the mixture is thick and firm. The texture should be similar to that of ice cream.
- Remove the base from the refrigerator and pour the filling over it. Smooth the surface with a spatula.
- Place in the refrigerator for at least 3 hours or ideally overnight for perfect setting.

3. Add the Gourmet Topping
- Melt the Biscoff paste over low heat or in the microwave (being careful not to overheat it).
- Pour the melted topping over the cooled filling and spread it evenly with a spoon.
- Sprinkle crushed Biscoff biscuits around the edges for an elegant finish.
- Refrigerate for another hour before serving for neat and tidy slices.
