Flattened Chicken (Butterfly Chicken)

#### Preparing the Chicken:
1. **Flatten the Chicken**:
– Turn the chicken onto its belly and cut along each side of the backbone with kitchen scissors to remove it.
– Turn the chicken skin-side up and press firmly on the breast to flatten it.

2. **Prepare the Marinade**:
– In a bowl, mix the olive oil, garlic, paprika, herbes de Provence, paprika, lemon juice, salt, and pepper.

3. **Marinate the Chicken**:
– Rub the marinade mixture generously over the chicken, on both sides. Let it sit for at least 30 minutes or up to 2 hours for the flavors to infuse.

#### Cooking:

**Option 1: Oven**
4. Preheat your oven to 200°C. Place the flattened chicken on a baking sheet, skin-side up.
5. Cook for approximately 45-55 minutes, basting with pan juices halfway through, until the skin is golden brown and crispy and the chicken is cooked through (75°C internal temperature at the thickest parts).

**Option 2: Barbecue**
4. Heat the barbecue to medium heat. Place the chicken skin-side down on the grill. Cook for 10-15 minutes to char the skin.
5. Turn the chicken over and continue cooking over indirect heat for 30-40 minutes, until cooked through.

#### Serving:
6. Let the chicken rest for 5 minutes before carving. Serve with a green salad, roasted potatoes, or grilled vegetables.
