Fluffy homemade cake with fruit – quick and easy

  • 300 g semi-coarse flour
  • 200 g powdered sugar
  • 1 baking powder
  • 1 vanilla sugar
  • 4 eggs
  • 200 ml milk
  • 100 ml oil
  • Fruit

Procedure

 

  1. In a bowl, beat the eggs, sugar and vanilla sugar until fluffy. Whisk for about 4-5 minutes. We should get a fluffy foam. Add the milk together with the oil and stir.
  2. Mix the flour with baking powder and gradually add to the liquid mixture. Blend until you have a smooth dough without lumps.
  3. Grease the tin with butter and sprinkle with flour. Pour the batter into the pan. Spread the fruit evenly over the dough. Bake at 180 degrees for about 30-40 minutes. Allow to cool and sprinkle with icing sugar.
