🥄 Caramel Flan Ingredients
For the caramel:
150 g sugar
3 tablespoons water
For the flan:
4 eggs
1 can sweetened condensed milk (about 400 g)
400 ml whole (or semi-skimmed)
milk 1 teaspoon vanilla

1. Prepare the caramel:
In a heavy-bottomed saucepan, pour the sugar and water.
Heat over medium heat without stirring, until a golden amber colour is obtained.
Immediately pour the caramel into the bottom of a flan tin or cake pan. Tilt to distribute.
Let it harden for a few minutes.
2. Prepare the flan batter:
In a large bowl, crack the eggs and beat them lightly.
Add the sweetened condensed milk, whole milk and vanilla extract.
Mix gently (without incorporating too much air).
3. Baking:
Carefully pour the mixture over the frozen caramel.
Place the pan in a large baking dish and fill it with hot water halfway up (baking in a double boiler).
Bake at 160°C (traditional heat) for 50 to 60 minutes. The flan should be slightly shaky in the center.
Let cool completely to room temperature, then place in the refrigerator for at least 4 hours (or overnight).
4. Remove from the pan:
Run the blade of a knife around the blank.
Invert onto a deep plate to release the caramel.
