1. Prepare the dry
mixture In a jar or bowl, combine all the dry ingredients (flour, cornstarch, baking soda, baking powder and salt).
Close the jar tightly if making ahead.
2. Prepare the batter
Just before frying, add 3/4 cup of very cold water (or sparkling water for an even lighter and airier batter).
Whisk quickly until you have a smooth, fluid batter (not too thick or too runny).
3. Use
Dip the pieces of chicken, fish, or vegetables into the batter.
Fry immediately in hot oil at 180°C until golden brown and crispy.
