Homemade crispy dough for light and golden brown frying

Mixing the dry ingredients:
In a large bowl, combine the flour, cornstarch, baking soda, baking powder, and salt.
Add ice water:
Gradually pour the ice water into the dry mixture and whisk everything gently until you get a smooth, slightly thick dough without over-working it (don’t over-whisk so the dough doesn’t become elastic).
Use:
Dip your shrimp, chicken pieces, vegetables or fish directly into this dough and then immediately fry them in hot oil until golden brown and crispy.
