Preparation:
1. Activate the yeast:
In a bowl, mix the yeast with the warm water and sugar. Let stand for 10 minutes until the mixture foams.
2. Prepare the dough:
In a large bowl, pour the flour and salt. Add the yeast mixture, warm milk and olive oil. Mix until you get a smooth dough.
3. Knead:
Knead the dough for about 10 minutes, until it becomes soft and elastic.
4. Rest:
Cover the dough with a cloth and let it rise in a warm place for 1 hour (it should double in size).
5. Shape the patties:
Degas the dough, then divide it into 8 to 10 balls. Roll out each ball into a thick disc (about 1.5 cm thick).
6. Cooking:
Heat a frying pan over medium heat without fat. Cook each patty for 3 to 4 minutes on each side, until golden brown and cooked through.
