Lamb Navarin

 

1. Peel the carrots, beets and potatoes and cut them into large pieces. Chop the onions and chop the garlic.
2. In a baking dish, heat the olive oil over medium heat. Add the lamb pieces and fry on all sides. Remove from the baking dish and set aside.
3. In the same baking dish, sauté the onions until translucent. Add the minced garlic and tomato paste and mix well.
4. Return the lamb pieces to the pot. Add the white wine and let it boil down for 5 minutes.
5. Add carrots, beets, bouquet garni and chicken broth. Season with salt and pepper. Cover and simmer over low heat for 45 minutes.
6. Add the potatoes and continue cooking for another 30 minutes, until the meat is soft and the vegetables are cooked.
7. Remove the bouquet garni before hot serving, accompanied by fresh bread.
