Mushroom and Ham Puff Pastry

2. Assemble and bake the puff pastry

  1. Preheat the oven to 200°C (fan).

  2. Roll out the puff pastry on a baking sheet lined with baking paper.

  3. Spread the filling in the center of the dough, leaving the edges free.

  4. Cut angled strips on the sides of the dough to form a braid (as in the photo).

  5. Fold in the ends, then braid the strips by crossing them over the filling.

  6. Brush everything with the egg yolk beaten with a little water.

  7. Bake for 25 to 30 minutes, until the dough is golden brown and crispy.

Chef’s Tips:

  • You can replace the ham with chicken breast, leftover roast or a vegetarian version with spinach.

  • Cheese makes all the difference: don’t hesitate to try a Gruyère-Parmesan blend for even more character.

  • For an even more gourmet version, add a spoonful of crème fraîche to the filling.
