Ingredients:
1 (4–5 lb / 1.8–2.3 kg) prime rib roast
3 tbsp olive oil, 4 cloves garlic (minced)
2 tsp salt
1 tsp black pepper
1 tsp dried rosemary
1 tsp dried thyme
optional: 1 cup (240 ml) beef broth for au jus.
How to Make:
Preheat oven to 450°F (230°C). In a small bowl, combine olive oil, garlic, salt, pepper, rosemary, and thyme. Rub mixture all over the prime rib roast. Place roast fat-side up on a roasting rack in a roasting pan.
Roast at 450°F (230°C) for 15 minutes, then reduce temperature to 325°F (165°C) and continue cooking for 1½–2 hours (about 15 minutes per pound) for medium-rare, or until desired doneness. Let the roast rest 15–20 minutes before slicing. Optional: use pan drippings with beef broth to make a simple au jus.
