For picky eaters, you can leave out the nuts and cinnamon and keep the bread very simple—just banana and a handful of mini chocolate chips. If you’d like to make it a bit lighter, swap half of the all-purpose flour for whole wheat flour and use oil instead of butter. For a dairy-free version, use oil and dairy-free chocolate chips (or skip the chocolate). You can also add 1/2 cup of blueberries or diced strawberries for a fruity twist, but be aware it may need a little extra cooking time because of the added moisture. If your family loves spice, try adding a pinch of nutmeg or a little extra cinnamon. To make it feel special for breakfast, sprinkle a tablespoon or two of coarse sugar and a pinch of cinnamon over the top of the batter before cooking for a slight crunchy, sweet crust. And if time is tight, you can mix the dry ingredients the night before, then just mash the bananas and stir everything together in the morning, pour and pat into the slow cooker, and let it bake while everyone gets ready for the day.
