Pour beer over the roast beef

Start by generously coating both sides of the roast beef with salt and pepper. The taste of the meat will be enhanced when cooked.
Heat the olive oil in a large Dutch oven or skillet over medium-high heat. Sear the roast beef for three to four minutes per side, or until browned, once the pan is heated. By doing so, you can seal in the juices from the roast and get a delicious crust on top.
Once the meat is seared, place it in a large roasting pan or slow cooker. Then add the aromatics and liquid. Wrap the roast with the minced garlic and onion.

Be sure to cover the roast halfway up the sides with the beef broth and beer. While the beef is cooked in the beer and broth, it will absorb the flavors of the beer and become tender and flavorful.
If you want more flavor, add bay leaves and sprigs of fresh thyme. The fragrant herbs will contribute to the overall flavor of the dish.
Sprinkle the roast alternately with the celery and carrot pieces. In addition to enhancing the taste of the cooking liquid, these vegetables will also serve as a tasty side dish for the finished roast.
Third, put it in a slow cooker and cook it for 8-10 hours on low or 4-6 hours on high, covered, for the perfect roast beef. The meat will become very juicy and flavorful due to the long cooking time.
