Preparation:
1. Prepare the filling
Heat olive oil in a large skillet over medium heat. Sauté the onion or shallot until translucent.
Add the mushrooms and cook until the water has completely evaporated. Season lightly with salt.
Add the ham and fry for a few minutes.
Add the butter and sprinkle with flour. Mix until well coated.
Gradually add the hot milk, stirring constantly until you obtain a smooth sauce.
Remove from heat, add grated cheese, parsley, pepper and, optionally, a pinch of nutmeg.
Wait for the filling to cool before assembling it.
