In a large bowl, combine the grated zucchini, shredded carrots, chopped onion, minced garlic, grated Parmesan, all-purpose flour, beaten egg, chopped parsley, and minced dill. Season with salt and pepper. Stir well until all the ingredients are well combined.

Shape of the donuts:

Take a handful of the preparation and shape it into a small patty. Repeat with the rest of the prep.

Heat the oil:

In a large skillet, heat a generous amount of olive oil over medium-high heat.

Fry the donuts:

Carefully place the vegetable patties in the hot oil. Fry them for about 3 to 4 minutes on each side, or until golden brown and crispy. You may need to proceed in batches to avoid overcrowding the pan.

Drain and serve:

Once cooked, transfer the fritters to a paper towel-lined plate to drain off any excess oil.
