3 sweet potatoes, peeled and cut into bite-sized cubes
2 teaspoons olive oil
1 tablespoon butter
1 tablespoon brown sugar (more if you like it sweeter)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
pinch ground ginger sea
salt, to taste
Preparation method
Preheat the oven to 175°C.
Spray a small baking dish with cooking spray.
Peel and dice the sweet potatoes and place them in the dish.
Melt the butter in the microwave and pour it over the potatoes with the olive oil, brown sugar, cinnamon, nutmeg, ginger and salt.
Add more sugar or cinnamon to taste. Stir to coat.
Cook the roasted sweet potatoes for 60 minutes.
