Soft Orange Cake

1. Preheat the oven
Preheat your oven to 180°C (gas mark 6).
Butter and flour a loaf tin or line it with parchment paper for easy removal from the pan.
2. Prepare the dry ingredients
In a bowl, mix the flour, baking powder, and a pinch of salt.
Set this mixture aside.
3. Whisk the eggs and sugar
In a large bowl, beat the eggs and sugar using a whisk or electric mixer until the mixture becomes clear and fluffy. This step is crucial to achieve an airy texture.
4. Add the liquid
elements Stir the vegetable oil into the egg-sugar mixture, stirring gently.
Pour in the fresh orange juice and add the grated orange zest. Mix until combined.
5. Fold in the dry ingredients Gradually
add the flour mixture to the bowl of liquid ingredients.
Stir gently with a spatula or wooden spoon to avoid overworking the dough, which could make it dense.
6. Pour the batter into the pan
Pour the batter into the prepared pan, making sure to distribute it evenly.
7. Bake the cake
Place the pan in the preheated oven and bake for 40 to 45 minutes.
To check for doneness, insert the blade of a knife or a toothpick into the center of the cake: it should come out clean.
8. Let cool and decorate
Once baked, remove the cake from the oven and let it cool before removing it from the pan.
If desired, dust the top with confectioners’ sugar for an elegant presentation.
