Preparation of the magic paste
Dissolve the salt in cold water.
Pour the flour into a bowl, add the cold diced butter and fold it in with your fingertips to have a sandy texture.
Add the salted water and form a ball without overworking the dough.
Flatten the dough slightly, cover with cling film and refrigerate for 15 minutes.
2 Preparation of the compote
In the meantime, peel the apples and cut them into 1 to 2 cm cubes.
Pour them into a saucepan with the butter, brown sugar, 1 or 2 pinches of cinnamon and water.
Simmer the apples for about twenty minutes without stirring.
Mash the cooked apples with a potato masher to obtain a coarse compote.
