1 tablespoon honey
1 cup rolled oats
2 eggs
1 ripe banana, mashed
1/4 cup milk (you can use almond or coconut milk for an extra kick)
1 teaspoon cinnamon
1 teaspoon baking powder
A handful of crushed walnuts (optional)
Instructions:
Preheat the oven and prepare the baking sheet: Preheat the oven to 180°C and lightly grease a round or square baking tray with a little coconut oil or non-stick spray.
Mix the dry ingredients: In a large bowl, mix the oats, cinnamon and baking powder. Make sure they are well combined.
Add the wet ingredients: In a separate bowl, whisk the eggs and add the mashed banana, honey, and milk. Stir until smooth.
Combine the dry and wet ingredients: Gradually pour the liquid mixture into the bowl of dry ingredients and blend gently until smooth. If desired, you can also add crushed walnuts for a crunchy touch.
Pour the mixture into the pan: Pour the mixture into the prepared pan and level it with a spatula.
Bake: Bake in the preheated oven for about 25 to 30 minutes, or until the cake is golden brown and a toothpick inserted in the center comes out clean.
Serve: Once baked, let the cake cool in the pan for a few minutes, then place on a wire rack to cool completely. Cut yourself into slices and enjoy this delicious cake guilt-free as breakfast or as a healthy snack throughout the day!
