
Wonderful stuffed eggplant: ideal for serving at a family meal, it is easy to prepare!
(You can add colorful peppers, and if you prefer something more carnivorous, you can add Tuscan sausage or ground beef.)

Preparation method:
Prepare the recipe ingredients by separating and chopping. Cut the eggplant in half lengthwise. Using a spoon or small knife, gently scoop out the flesh from each half, leaving a thin layer to support the skin. Chop the flesh of the eggplant.
Pour the olive oil into a saucepan over medium heat. Once hot, add the onion and garlic. Sauté for 3 minutes, or until the onion is translucent, stirring frequently.
Add the chopped eggplant pulp and stir. Cook for 5 minutes. Then add the tomato and basil and cook for a further 3 minutes. Season with salt and pepper, turn off the heat and set aside.
Preheat the oven to 160°C (low). Using a spoon, divide half of the stir-fried mixture among each eggplant canoe. Arrange the mozzarella on top of the filling and sprinkle with grated Parmesan cheese.
Arrange the stuffed eggplant canoes in a baking dish and bake in the preheated oven until golden brown. Once the cheese has melted, remove from the oven and serve immediately.
