Ingredients:
For the Dough:
500 g flour
75 g sugar
10 g salt
10 g baker’s yeast
300 ml warm milk
1 egg
100 g soft butter
For the puff pastry:
200 g cold butter, for the tourage
For the Filling:
Dark or milk chocolate bars, cut into pieces

For the Dough:
Activate the Yeast:
In a small bowl, dissolve the yeast in the warm milk with a pinch of sugar. Let it sit until the mixture foams.
Prepare the Dough:
In a large bowl, combine the flour, sugar, and salt. Add the beaten egg, the yeast-milk mixture, and the soft butter. Knead the dough until it is smooth and elastic. Let the dough rest for 1 hour.
Make the Tourage:
Roll out the dough on a floured work surface into a rectangle. Place the cold butter in the center, then fold the edges of the dough over the butter, like a wallet. Fold the dough into thirds (single turn). Repeat this process twice, letting the dough rest in the fridge between each round.
