Ingredients:

500 g wheat flour (preferably type 550 or 650)

Preparation of the sourdough starter (if using fresh yeast):
In a bowl, dissolve the yeast in warm water with added sugar. Let stand for about 10 minutes, until the yeast begins to foam. If you’re using instant yeast, you can skip this step and just add the yeast to the flour.

To make the dough:
In a large bowl, whisk together the flour and salt. Add the sourdough (or instant yeast) and olive oil. Knead the dough for about 10 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little flour, but try not to add too much – the dough should be slightly moist.

Rising the dough:
Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a kitchen towel and let sit for 1 to 1.5 hours in a warm place to double in size.

To form baguettes:
Once the dough has risen, remove it to a floured surface. Divide the dough into 2 equal parts and shape them into long, narrow baguettes. Place them on a baking sheet lined with parchment paper. If you want a classic look for the chopsticks, you can make multiple slits on each one.

Bake:
Before putting the baguettes in the oven, let them rise for another 20 minutes. Preheat the oven to 220°C (if you are cooking with fan, then to 200°C). Place the baguettes in the oven on the middle rack and bake for 25 to 30 minutes, until golden brown and crispy.
