. Make the Custard Topping:
In a saucepan, combine egg, sugar, and cornstarch.

Slowly whisk in almond milk over medium-low heat.

Continue whisking until mixture thickens and becomes frothy (5–10 minutes).

Once it begins to bubble, cook for another 2 minutes, whisking constantly.

Remove from heat and stir in vanilla extract. Let cool.
